The best blueberry muffins!

Yes, blueberry muffins.  Probably not the kind that you will find in a typical bakery, or on the counter at your favorite deli or diner, and definitely not like the ones hiding in opaque packages on convenience store shelves, but still blueberry muffins.  The difference between these and all of those others are the health factor.  These are made with only whole, health promoting, ingredients.

With only unrefined whole grains, fruit, and a few spices, these are muffins that you can eat for breakfast or a snack completely guilt-free!

simple, delicious, nutritious, blueberry banana oat muffins.
Ingredients
  • 4 ripe bananas
  • 2 cups oatmeal
  • 1 cup of wild blueberries (frozen work just as well as fresh)
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tbsp vanilla extract
  • 1 tsp almond extract
  • ½ tsp nutmeg
Instructions
  1. Preheat oven to 375 degrees.
  2. Throughly mash the bananas in a large mixing bowl until they become an almost liquid consistency.
  3. Add the vanilla, almond extract, cinnamon, nutmeg, baking powder and sir it all together into the banana.
  4. Add the rolled oats and combine well.
  5. Mix in the blueberries.
  6. Put the mixture into a muffin pan. (makes about 12 muffins)
  7. Bake at 375 for about 40 minutes until the tops start to brown slightly.
