Preheat oven to 350*F and line 2 baking sheets with parchment paper
In a food processor with an S blade, blend all ingredients except walnuts
Scoop out about ¼ cup of dough onto parchment and using the back of a spoon or a knife, spread into a cookie shape
Bake for about 15 minutes
Once cookies are dry enough to get off of the parchment easily with a spatula, press walnuts into cookies and transfer to a plate or cooling rack
